Q: What would have happened if Adam and Eve ate from the tree of life? Why is it something God didn't want them to do?
My understanding:
When Adam and Eve did not sin, they could eat any fruits in garden of
Eden (except the fruits on tree of wisdom) including from the tree of
life. When they were not separated from God by sin, they have the
eternal life given by God. However, when sin came in, it separated men
from God and cut off the source of eternal life (God Himself). It is
not God taken away the tree of life from us, it is the consequence of
our sin. God has to do all the work of redemption fulfilled by Jesus
Christ. In the new heaven and new earth, we will taste the fruit of
tree of life again (revelation 22).
The symbolic meaning of fruit
of tree of wisdom (God gives us free will to choose. We should always
choose to trust God, because He is the source of wisdom, there’s no
other way to get wisdom by ourselves. ) The symbolic meaning of fruit of
tree of life (God is the source of eternal life. When we’re separated
from God by sin, we lost the source of life. The wages of sin is death.
)

My understanding:
Cherubims and flaming swords are guarding God's holiness. They also
represent God's glory and mercy. God will give us His mercy through
redemption.
